    Have you considered other bikes besides Ghost. Merida One Sixty comes very highing recommended in magazine reviews. Not sure of Merida presence in UK but worldwide they are one of larger bike manufacturers.

    For your wrist problem, try a more vertical stem. An adjustable stem would also work, but don't use it for serious MTBing as it could give out on big hit. If this doesn't work next step is new bars checkout Jones bars. Tourers swear by them.

    Excellent brakes are useless if tyres don't have traction to support it. At these speeds good tyres are a must, fat city tyres ideally with very soft grippy compound front tyre. You may have to trade puncture resistance for safety here.

    A lot of quality european city ebikes use magura rim brakes. The big plus over VBrakes is pad replacement and adjustment. V brakes are fiddly to adjust when pads are half worn or need replacing. Watch Magura videos to see how easy it is.

    I run hans dumpf on back, harder longer lasting compound with stronger carcus. Soft gripper compound magic mary on front. There is no reason you cant fit Magic mary to rear, excellent grip but higher rolling resistance, which is not issue on ebike.
