With bike crashes it tends to be a head first, and no time put hands out to break fall. Running, walking you face plant and normally hands are free to help break fall.

    Caliper recommendations

Two lower price Tektro brakes I have both gave me grieve. While Shimano have been faultless. Just be aware when buying sets over Internet's, they maybe configured with front brake on left. If you buy front and rear set they can be swapped but you will need to bleed them. Easy job if you have...

I knew I shouldn't have walked into the shop!!

I'm impressed with your shop, never had any bike shops I've bought from offer to help setup suspension. Dropper seat is worth adding in future. I use mine all time not just for steep descents but also around town, allows me to put feet flat on ground while stopped.

    Haibike... Bosch or Yamaha?

If you plan to use a dongle then double chainring makes sense other wise simpler 1x 11spd or SRAM EX1 1x8spd. After using 1x11spd, I know why most new MTBs have drop front derailleur.

    Haibike... Bosch or Yamaha?

The Shimano MTB drive has had good reviews. Big plus well protected displays and switches. Also try new Yamaha PWX drive, better power delivery than PW but only on dearer haibikes 7.0, 8.0. Don't forget Brose powered bikes. Happy hunting.
