I have expressed exactly that sentiment to Giant and am awaiting a reply. Although the dealer is legally responsible for any contract ,written or verbal, that they make (we will fix it next week) I dont blame them as they are as much in the dark as I am.I dont see the KPH only display as much of an issue..... What i would have had an issue with, is the fact i wasn't informed of it before buying the bike.
A company shouldn't just tell customers after and just expect them to suck it up.

No I don't believe they deliberately led me on. It wasn't a stock bike, it had to be ordered in, so why risk a confrontation when all they had to do was tell me to wait a month for the mph version. I suppose I could try Judge Rinder ..I would ascertain that from them telling you to come back, its probably likely that the dealer had no idea of this issue of KPH only.
However, ignorance is not a defence in law...... and furthermore Giant were certainly aware of this issue and should have made it clear to their dealers.
I would say you are on pretty solid ground for some sort of recompense...... its now down to whether you can be bothered to fight for it. Dont expect Giant or the dealer to back down easily.
