Both bikes listed have Activeline (40nm torque) motor. Not recommended for lot hill climbing. Look for higher spec Motus range that have Activeline Plus (50nm) motor. Try for step through frame which have frame mount battery not rack, better balance bike, especially with full panniers.
The CX will be about 20-25% faster on climbs. But Plus would be nicer on flat and gentle hills. Really depends how much of your rides involve climbing.
I doubt it will be an issue, given Activeline modest power output.
An upgrade to Magura HS11 hydraulic rim brakes would be worth considering. As good as 160mm disc brakes, in some ways even better.
If you are always using E6000 on High in climbs then 60-80nm motor is better option.
E6100 is E600 replacement 50nm? while E7000 is 60nm more detuned E8000.
The one big advantage of CX drive is huge choice of bikes that have it.
You can swap tyres between rides, but it's time consuming especially with hubdrive.
For middrive MTB, buying 2nd set of wheels with offroad tyres is simpler option. Budget for disks and cassette. If running mudguards these may need to be removed depending on tyre clearance and type of riding.

The STEPs 6000 I had wasn't any noiser than me CX drive, but 25kmh cutoff was sharper, bosch fades it out between 25-27km..

Bought Specialized one, reviews weren't great but its only KSA18 bike shop had. Seems OK, time will tell.
My preference as its less of distraction and frees up room on handle bar for bag/ basket mounting. You do lose a few features, clock, trip time and average speed?. Also little more tricky access features as you don't have info button.
Allow for extra battery, 800-1000WH total. Also consider lowering gearing of bike, 38 chainring with 11-46t cassette would be ideal regardless of motor. A 11-42t for more powerful 60-80nm motors.
Without a in built gps SW can't prove 100% if bike has dongle fit.
If SW thinks its detected a dongle, there are few options open to them.
1) log it and do nothing. Can be used as evidence in future for accident investigations or warranty claims.
2) stop assist and display error code that...

With FS MTB, quality suspension is important, as upgrading later is just to expensive. £4k is about right for eMTB with quality midrange suspension and components.

Double chainrings are only need if want fit dongle to commute at 25mph+ while still have low climbing gear for very steep hills.
Otherwise 1x11spd is more than enough for most riders, plus lot easier than front derailluers to clean.
