Looking for a e-bike that goes from 0-15mph rapidly with minimal effort

No, it is not legal. You can ride it on private roads and land if you have owners permission.

Looking for a e-bike that goes from 0-15mph rapidly with minimal effort

They say it has 250W limited motor. There is no such thing. You can't take 750W rated motor and limit it to 250W to make it legal. This bike limited to 250W would be useless anyway. https://www.cyrusher.com/pages/ovia-specifications

Trying to get back into cycling but have lots of questions!

On this bike probably rear hub would be better solution. I see disc brake mounts on fork, which is good.

Trying to get back into cycling but have lots of questions!

I can't see why not, but also I can't guarantee anything. Chain line might be an issue especially with extra spacers. https://ebikestuff.eu/en/content/16-tsdz8-review-and-tsdz2-osf-comparison-tsdz8-vs-tsdz2-osf Andy from Woosh should help if you decide to buy from them.

Trying to get back into cycling but have lots of questions!

Just to let you know, my favorite mid drive is TSDZ8. Equipped with torque sensor, quiet and very powerful. Rated 250W and road legal when bought from Woosh.

Trying to get back into cycling but have lots of questions!

Bike must be road legal to ride off-road as well, unless you ride on private land and with owners permission. Legal motor can be very powerful (even 1000W). Legal restriction is on motor rated power, not on power output. Motors are usually delivered with some spacers to give you some room for...

Trying to get back into cycling but have lots of questions!

I tried templates, but it didn't give me a conclusive answer, so I decided to take a leap of faith. I told myself in worst case scenario I will buy another donor bike. I filed frame a bit, filed motor a bit and I am very pleased with end result. That also sounds like a good solution.

Trying to get back into cycling but have lots of questions!

It is a Chinese company. They used to have stock in UK, but after Brexit they slowly moved to Germany. Their shop is confusing, yes. I always choose German warehouse if I can simply because it is closer than China. Never had to pay any import fees.

Trying to get back into cycling but have lots of questions!

Which Voodoo bike do you have? Can you post some pictures please? Especially around BB. 750W rated motors are illegal in UK. PSW is my favorite supplier. 48V 15Ah branded cells is a decent start. Not worth to go lower than that IMO. PSW has cheapest batteries. Gear sensor is recommended,

    Giant entour/yamaha with Yose battery?

I wouldn't buy a bike with proprietary technology. Cheap or expensive it is a false economy. Buy a bike which you can repair and expect to be able to buy spare parts in the future.

    Giant entour/yamaha with Yose battery?

Show us some pictures and provide as many details as possible. The reason why somebody is selling it cheap is most likely because it is using proprietary technology and you can NOT use Yose battery,
