With 'Lithium Ion' and 'Lithium Polymer' pack cells looking so simular, is it wise to always assume the pack was assembled with the safer 'Lithium Ion' type ?
Yes it is. You don't get lipos (LiCO) in ebike batteries unless you made it yourself.

Lithium Polymer and Lithium-Ion are only general terms with no real meaning in the general sense. Many ebike batteries are technically both. It's the exact chemistry that's important. What's in RC batteries is very volatile and only gives half the life of a typical ebike battery.

People here are getting confused between the two because Lithium Polymer is written on some ebike batteries and you can get both in pouch form. That doesn't mean that it's full of "lipos" used for RC models. The pouches in ebike batteries are normally the weakest and least volatile types of Lithium cells.

Pouch cells are pouch cells they all in one way or another use a polymer inside as this is why they bulge, once bulged they are only fit for recycling. They also come under the name of prismatic or lifepo4 (older chemistry) or li-po. The lifepo4 is one of the safest chems for batteries though there downside is the heavier weight due to the Pb inclusion of the chemistry.

RC stuff does tend to be high discharge and the packs have quite a punch of power in a small brick type pack, ebike batteries will still have good power and any pouch type are still a li -polymer construction.
Just dispose of them safely and for safety leave them where they can do little harm.
