What's the experience like with hydraulics on a folding bike? I have to route through the frame a through the hinge and slinky. The slinky should prevent kinking, but are the hoses going to be happy folding like that?

They are ok with an arc or small curve along the routing.
For a folder opt for a rear rim brake if in doubt and a front HDB, the front is where the most brake force can be applied and controlled and typically the front accounts for 70+ % of braking effort .

Can a fold be managed with without excessive kinking or curvature of the brake line ?

I don't think that would work. It would be better to run the hose externally so that it can make a big loop when folded. That's what I did on my Dahon Jetstream.
