E-bike for transporting a child. Help me find one, pls!

your child is at the top end of the capability of a child seat, front or rear.
The cheapest alternative is a trailer.
What're you referring to?
the height of the child seat will not let you swing your leg over it.

I transport my disabled 7-year old son on my Woosh Big Bear in a rear child seat that I bought from the Netherlands. The seat I use is the Yepp Junior child seat. Here is a link to it: https://www.athleteshop.co.uk/gmg-yepp-rear-seat-junior-budget-black. It is suitable for children from age 5 to 9 (35kg weight limit), and so I thought it may be of interest to you. You can also buy it on Ebay and at Halfords, although it is cheaper on athleteshop. I used to use a tag-along trailer to transport my son, but I switched to the child seat about a year ago. In my opinion, a child seat is a lot safer than a trailer.

There may be a good reason why you have not considered this, but if your current set up works, just get a much stronger rear wheel built for it. That would be a much cheaper option.

I've got a similar seat on my current bike. They're pretty good.

I thought about that actually - but the result, according to the cycle shop, may not 100% guaranteed. Plus, my bike is really a pain in the arse. While it works fine, it just feels unbalanced and I have to constantly tighten up the screws and bolts. Just feels fragile. The handlebar stems keep getting loose and wobbly; I tightened so many times and now the bolts are stripped and won't turn.

I've had it for over a year now, and it's been problematic since day one.

I want a strong bike, fat or not, which I can use to transport my 6-year-old for at least two more years. It seems fat bikes are the sturdiest out there, or at least this is what I think they are.

they are sturdy alright, but the RadRhino you have chosen has a crossbar frame, you have to get on it before your child and off it after your child.
It's not easy at all, especially when your child is already in the seat and needs attention.
You are better off with a low step frame, not necessarily step through but low enough that you can get on and off with your child already strapped in.

You are better off with a low step frame, not necessarily step through but low enough that you can get on and off with your child already strapped in.

How heavy are you and what is the gradient of the steepest hill in your area?

I'm about 84kg, and my little one is about 21kg. Where I live is mostly flat.
