all the step through with rear motor have the same issue with the high rear loading that you need.
The strength of the wheels come from two factors:
1. Strength of the rim. fat bike rims are hell a lot sturdier.
2. Length of the spokes: the longer the better. Spokes work by their elasticity. Short spokes are less elastic and more prone to snap.
That's why I recommended good bikes with crank drive motors.

The woosh is interesting. I'm looking at the website and all they have is cross-bar, no step-through fat bikes?
The step through is now ready to ship, I'll post it on the website next week :)

I would love a mid-drive e-bike, but unfortunately, they're beyond my budget limit.

Off the top of my head, I can think of a sturdier/larger rear seat, battery operated front light, and ergonomic grips.
seat: the rack is sturdy. Just zoom in the rack, the tubes are 25% thicker than those on the normal bikes. I don't think you need to change it.
lights: the bike comes with front and rear lights.
grips: I sometimes fit Argon GP1 grips for customers who request them.
Replacing the grips that come with the fat bike is easy: 5 minute job. Just loosen the allen bolt and pull them out.

Thank you! Yes, it seems sturdy. It's probably a bit high though considering I'll put a child seat on it. Could it be lowered?

Also, one last, although silly, question, can I use a different, larger controller panel? Something similar to the one on RadRhino, and also position it in the middle? Sorry, I struggle with peripheral vision sometimes...

No.
The height of the rack on the lowstep Fat Boy is the same on a 700C wheeled bike.

That's great, thank you!! I'm actually tempted. I guess I can always replace the rack if it's too high, not a big deal.

Should be back in the UK in a month or so, so I'm hoping by then the new step-through model will be available for sale.

Woosh will you someday sell cargo bike? I've always wondered why no seller do electric cargo bike at decent price? Is there no market for it?

It could be a perfect and cheap way to replace car for daily utilities
