Even in the UK we can see severely delayed results - for example, the ballot boxes for the Scillies or the Western Isles can be delayed due to weather. If the military were send helicopters, it might be impossible to land.
The USA also has a significant number of military personnel around the world who are entitled to vote. Those can take time.
But some of the delay is not with the ballot papers getting to the count, but the detailed approaches they have used. Some allowed mail-in votes to be counted almost as they arrived. Others insisted they could not start counting them until the polls closed. Some demand that in-person ballot papers are counted before mail-in. And so on.
