That appears to stop almost instantly the "pedaling" stopped, that may remove the need for the brake tapping on shift.

Sorry to hear about your ongoing problems, I wish you a speedy recovery.
Yes, it appears you need less than 1 revolution of the crank to start and stop the motor so the "problem" is minimized.
If used in normal cycling mode I don't think it will cause to much concern and you always have the throttle control option (no pedaling required) in crowded situations.
Apart from terminating the battery leads with a suitable connector only basic tooling is required to fit the kit even a LBS should be able to do this if the user doesn't feel capable of doing it.
The biggest "problem" I see is parting with the money for the kit and the battery
