Get yourself a 60v 5A lab power supply. They're cheaper and most likely have the same components/module in them. Gophert make a nice one that's practically the same.

There's a dial to set the voltage and an LED display to show what you've set it to. It's the same for the current. You'd hsve to have a few braincells missing to get it wrong. You can use it to charge anything.

Yes, it's CC, CV, just like any charger, i.e. it gives the current you set until it gets close to the voltage, then it ramps the current down and will aim to keep the set voltage constant after that.

Lab power supply does not disconnect charger, when current drops. eBike changer does.

Where did you get that from? I have seen some ebike chargers that latch off, but most are CC-CV and hold maximum charging voltage as long as they're connected. That's important for balancing.
