What ebike would you recommend me?

Cube touring range might do. The Raleigh Motus if you want to be a little more sedate. Pretty much any should do that combination. If you want to stay near the lower end, look at the various offers by Woosh,

I have been suggested a Haibike bike and I think I will be looking into to more, hope someone could suggest me a model

I have a Cube Acid Allroad. Nice to ride and seems to be well built. Bosch Active Line Plus motor is more than sufficient unless you want to climb really really steep mountain trails and feels natural when pedalling. Mostly very quiet motor and no noticeable resistance when pedalling above 15.5mph. I love the 29inch wheels and would recommend that size on any bike. The Allroad has full mudguards and lights - not sexy but very practical. I like not getting muddy on trails. Should be able to get one for south of £1700 if you ask for a discount. I changed the tyres to Marathon plus mtb to prevent punctures.
Haibike isn't out of the picture at all. Look at E-Bikes direct, I got a Haibike Trekking 4 which is designed for exactly what you need it for, I got mine for under £1700. Done 700 miles since March and love it. I have a thread on here under the 'road test' bit, and have a look at their website under the Crank Drive section.

Go for one of Haibikes Trekking models, they are great do it all ebikes, good quality very durable and comfortable.
You say you've got a budget of £1000 to £3000, as you go up the specs the components of the bike get better and probably more reliable and durable. I would buy a make with a good reputation and spend £2500 plus. If I had your budget I would buy a good Haibike or Cube, if you buy a compromised bike you may end up upgrading before long.
Yeh - in terms of being 'bomb proof' the Cube ebikes are pretty much there.
I've done 2200km on mine this year without even a squeak and they are very comfortable over just about any surface (short of proper MTB trails).
Mine is the touring version. They are built like tanks and are very heavy (23kg before panniers etc.) so you don't want to be carrying them upstairs and you won't be going more than 25 kph unless downhill or on flat good tarmac.
If you can get one for £1200-£1600 I'd take their hands off if I were you.

Yup a perfect bike for my needs but they are nearly sold out (need to get my finance sorted as an expense just come up) I think I have to wait for the 2020 models.

I read about ebike dongle to make it faster but I just read here on this site the legal speed is 15.5 mph :/
The 15.5 mph is correct as a legal limit for ebikes without licence, insurance etc. There are quite a few irresponsible people who buy illegal bikes, or illegally adapt their previously legal bikes.
