I've got one that clamps to the handlebars, basically a clamp that you mount a normal bottle holder on. Never had a problem, with the bonus of carrying the odd coffee or three... nice on cold winter mornings.

I use to be a handlebar mounted bottle type of guy but now favor my bottle between my legs:p using a plastic bottle cage mounted on top of the top frame tube it dosent bounce around off road like it did on the bars.
Using the type of cage in my link you can drill some 4mm holes through its side and cable tie it to your frame, a pice of rubber between the frame and cage helps keep things in place ;)

I have got a couple of cheap plastic Chinese holders that clamps to my head tube off ebay, 2 for £3.50 the fitting is a simple clamp with a cam lock. and can be fitted any where which has a min 30mm tube. Also have a drink holder fitted to my German Additive Bike Bag which will take one on each side, may fit the 2nd one if the weather gets very warm.

Initially I was being clever by making a slot big enough to use Velcro straps but they never quite fully tighten up, (there's still one on the rear of my cage) Now I have two ties through the front part of my cage and eventually I'm sure I'll get around to replacing the last Velcro strap with two more ties.
Also as the cage is plastic, if needed it easy to file/shape/profile the back face to match your frame shape (my top tube is fairly flat)

Black aluminium one from my other hybrid, cannot use the mounting screws as the ebike frame isn't tapped, so resorted to my all time favourite black cable ties to match holder and the frame, my Electrical Engineering training shines through again, solid secure and doesn't move. sorted

You could use rivnuts to give you proper mounts in the frame, does mean setting about your frame with a drill though ... You don't need the expensive tools to fit them

I suspect that it would also mean invalidating the warranty of the bike.

Phill, frame mounted water bottles and mtb off road use is frequently not a good idea. If the bottle doesn't become covered in crud, then sooner or later it will just bounce off the bike.
If you don't like the idea of something like a CamelBak, try a waist band mounted system.
