Help please - I just can't find my unicorn ebike, ideal spec - hub gears, gates drive, mid motor, road/gravel style (would go for cross bar hybrid if I can't get road/gravel), sensible cost

Can anyone suggest anything please?

There was a larger one too, but it disappeared yesterday, so presumably sold.

Buy a bike, add mid drive, get a wheel made using a rohloff hub or Alfine / nexus hub. I think you need a special frame to use a gates drive but people have converted it on a standard frame.
