So now cables are just zip tied I would like to protect/hide them a bit better. Any good ideas what to do?

Spiral wrap is the easy to use solution, it comes in black so good for you. CPC Farnell do it, though their web site is a bit of a pig to sort through. Generally do a search for spiral wrap.

All my excess wire is up near the handlebars, I used a small zipped belt pouch for the bundle of wires

A much neater solution when the cables are that long. Is to cut to length, rejoin (solder) and heatshrink joints!

That extra cable length looks like the controller to motor connector cable or trunk cable to the dispaly, in a similar line to that which monty has said shorten it. One can buy shorter cables if one searches online, may be neater then shortening them.

I don't have tools to do that. I think I'll try to wrap them with inner tube.

self amalgamating tape would work better than inner tube and doesn't end up as a sticky mess
