Just a thought. My brother had a very similar problem with his gen 2 swytch too. It turned out that his batteries in the battery pack was very much out of balance and the pack was shutting down. Your packs are also quite old.
are there alternative PAS that I can use instead of the one from Swytch? Something I can order of Amazon in the EU?

The problem with changing the PAS is that swytch PAS has a Julet connector, wired for a Lishui controller. You might be better off to try to locate a swytch pas from ebay. If you buy a different make then its possible to cut the three wires and splice it to the swytch connector, but you need some electrical expertise, a meter, and shrink-sleeve and soldering tools.

As you’ve posted pictures of an open battery pack, then if you can find a voltage meter, make sure that the pack charges up to a full 42v. If it doesn’t, then your cells are out of balance.

There’s a two pin yellow plug on the actual plastic battery box where you can measure this. That is the battery actual output. You’ll need to switch the pack on with the switch.

One doesn't need to take the battery a part , but just find the connection point and look at the connector on both parts for any signs of discolouring.
Like wise do the same for the controller to motor phase wire connection.
I had same symptoms as OP and this was the cause on my DIY build. I hadn't locked the hailong case on one journey and the arcing on the base plate connection melted the plastic and gave an unreliable connection thereafter. New connector fixed it.

There’s no way I can tell how they’ve wired the plug. The swytch pas is a 12-magnet pas - and this might not be. If you don’t buy a swytch pas then its down to your technical skills to get it to work.
Is you’re existing PAS physically bad? It sounds like it’s trying to work, but is maybe dirty and out of alignment (needs a constant 2 to 5mm gap between the pas magnets and pas sensor.

If the PAS works in reverse then either setting is wrong or one can try changing the PAS sensor orientation to see if that works. Rotate the PAS unit on the axle by 180 degrees , one will have to remove the crank arm to pull the PAS off and rotate the direction ( the wire out let direction needs to be the opposite to that which is now).

With a two piece PAS sesnor one would simply rotate the magnet disc face so as to have the correct magnet pole facing the sensor.

If the batteries charge to 41.5v - 42v then balance shouldn't be an issue.
