Just in process of switching from a thumb throttle to twist throttle & need little help with the wiring.

Both connectors are the same but the 3 wires are different. My existing thumb throttle has a Black, Red & White wire in that order. The new throttle has a Green, Black & Red wire in that order.

Is it simply a case of switching the wire over Black to black, Red to Red & White to Green then plugging it in ?

Seems to make logic.

Impossible to say for certain, but white and green are common substitutions for each other, so that could be right.

Finding my (electric) wheels
Tubaman the following is the wiring information for the throttle.
Red and Black are the power supply connections and Green is the Hall effect sensor.

Red=5V
Black=GND
Green=Hall sensor

You can test it works properly as follows-
With a voltmeter/multimeter there will be 5 volts between red and black.
Keeping the meter black probe on common (-ve) move the red probe to the green wire connector. You will see that as you turn the throttle from zero to full speed the motor will smoothly increase revs to full rpm. This will correspond with a smoothly increasing voltage on the meter from 0V-4V (approx) over the full speed range.

Happy testing!
