Overhaul of a Carerra E-Vengeance Junior

I have a 2019 Halfords Carerra E-Vengeance Junior. AFAIK it has the same specs as the regular Carerra Vengeance Ebike only on a 14" frame.
It's currently knackered- the pedal cadence sensor is intermittent to the point of barely functioning, and then recently someone stole the LCD display from it.
This got me thinking- as it would probably cost of lot of money and time to get it working again, would it be better / easier / achievable to convert it from a pedal assist a thumb throttle? I figure this way would be easier, but does anyone have any advice?

The pedal sensor should be easy to fix, and won't cost much, if anything at all. It'll be a lot more expensive to fit a throttle, as you'll probably need a new controller.

Thanks that's good to know. The followup question then is- does anyone know where I can get a new display? Either the Suntour HESC below or compatible?
