That looks good. ridgeback is fine. Almost all brands use the same components; obviously lower end for cheaper models and higher end for expensive models, and pretty similar frames. There are lots of advantages to hub gears, but the gear range may be a little less than for a derailleur bike.

The 125km will be a very optimistic range; lowest assist, flat good roads. It may well not do 50 miles of real riding (***). The specs don't mention battery capacity which is odd. (probably 418wh?)

If anything does go wrong after guarantee any repairs or new batteries will be expensive.

(***) You didn't mention what sort of riding you wanted to do, how hilly, and whether you wanted lots of electric assist or just a boost to help you up hills. If you look at https://www.bosch-ebike.com/en/service/range-assistant/ you will see how much range depends on many factors; the broad comparisons will be the same for Bosch or bikes with other motors. Choose the Bosch 400 battery for a pretty close idea of what you will get.

p.s. Cheaper from https://winstanleysbikes.co.uk/ridgeback-electron-di2-2019-electric-bike
£1560, but only extra large?
Mostly help up the hills, at the moment I have to get off the bike and push up the hill.
Mostly road but the occasional gravel path

if you want the cube you have 3 options

di2

sram eagle axs

you can convert a normal rear mech with one of these but also not cheap

Going back to the cube reaction 500. Evans cycles says it is SX eagle
My bad, it is the AXS that means electronic shifting with the Eagle.
The SRAM 'TECHNOLOGY FOR SIMPLICITY' strapline certainly does not apply to the clarity of their website!

what about a grip shiftier?

In layman's terms. What sort of bike would I fit this to. Do I just buy a normal ebike?
And would I find someone to fit it for me like a mobile bike specialist?

if the bike has sram eagle then any eagle grip shifter will work with it.

the gx one would do as it just gets lighter and more expensive say the xx1 one

I need electronic gear shifters on the ebike due to arthritis in my thumbs/hands
I like twist/grip shifters (I cut a muscle when young which makes right side push shifters awkward) but they might well not solve the original issue.

The Shimano twist shifters on my hub Motus are a little stiff. About right for me as lighter ones can get turned by mistake, but they could be too stiff for someone with arthritis.

Regarding the original question, with a decent ebike you won't need to change gears so much.
if it's a hub bike then yes, if it's a crank drive then you have to be in the right gear all the time to be kind to your bike and keep your cadence high.
Crank drive motors give more power if you keep up your cadence.
Most people with arthritis would choose a hub bike but it's not a rule.
