I have been looking to purchase an E bike for three months now as my wife has had both knees replaced in the last 18 months and needs assistance to enjoy the pleasure of cycling again. Simplicity of operation is my main consideration in choosing an E bike. My wife has always had a problem using derailleur gears and with arthritis starting in the fingers and hands cant manage twist grip gears. We are in Worcester next Monday so are doing an arranged test ride of the GTech ebike at Gtechs HQ. If she doesn't like it I'll be back here for more ideas

your wife may find a full throttle very useful. Something like the £799 Woosh Petite may suit.
Woosh can't plug the throttle in for you because of the new law but you can.

Quite expensive, but I guarantee that she'll love it. Its very light, has fully automatic gears (with manual over-ride like tiptronic) and very unintimidating to ride. I love this bike myself. Three times the price of the Gtech:
