on my mid drive ebike the rear gear cog turns a little bit before it 'locks' and starts turning the rear wheel meaning I get a little 'clunk' when the motor engages. Is this normal or is something broken/breaking? (see video)

you will need to remove the cassette and take a look at the free hub pawls as one could be stuck or broken.

Get used to it happening, because on any mid motor e-bike, as the load on certain parts is very high, due to all the human effort AND the motor effort, pass through the chain and associated parts....so they wear much faster.....failures happen.
On a front or rear e-bike motor, the chain has no motor effort being transmitted through it, so it wears far slower.
A front or rear motor e-bike, the chain has even less effort to transmit torque than even a conventional bike's chain, as a lot of the load is taken off by the motor....
Chain and associated parts on mid motor e-bikes are points of failure, with the added bonus that if any of them break, only walking and down hill coasting are left.
But front and rear motored e-bikes, probably 95% of them will (as long as the battery still has charge), an effortless ride home, with the broken chain in the rider's pocket!
They are also generally cheaper than mid motor offerings as well....Mine (rear motor)cost under 1000 UK pounds, including two batteries in 2017.....
