Interesting about mutations. When I feed the starter, I discard 66% of it and replenish the discard with fresh flour and water. I thought you could keep that going indefinitely. I’m sure the Savoy Hotel has a sourdough which is over 100 years old. Or have I imagined that?

Covid: Over 40% of deaths in mid-January linked to virus
It is highest since pandemic began - but there are signs the peak may have passed.

There were more than 9,000 deaths linked to Covid in the week ending 22 January, an analysis of death certificates show.
The figure, from the UK national statistical agencies, is up by nearly 1,300 on the week before.
It represents 44% of all deaths during the week - the highest proportion since the pandemic started.
There were 20,700 deaths in total - more than 5,700 higher than the average for this time of year.
I think quantitatively it's clear that it overestimates, and I firmly believe by a very large margin. Only a few of the numerous deaths are lingering ones in ICUs since the 28 day ruling applies across the board, deaths at home, in care homes and anywhere in hospitals.
It's easy to blame non-adherence to the rules for our very high death rate as some do in here, but the majority of the population have complied sufficiently for the death rate to compare favourably with most other European countries. That it is so high doesn't make any sense.
I think it comes down to excessive recording as Covid, in large part due to the 28 day rule, in large part due to Covid death being so easy a cop-out for the death certificate since this can apply regardless of whether there even was a test or not.

A few months ago there was a program, with Greg Wallace, in a French croissant factory - Brioche Pasquier. They use sourdough as a part of their croissant mix - and claimed it had been going since around 1936.
However, they keep the sourdough going separately to the croissants. The croissant dough has yeast then some sourdough for taste.
Yes you can. I watched a TV feature on a baker whose been specialising in sourdough bread for decades and he keeps his starter going indefinitely by feeding it, but the baking must be regular. If you take break from it the starter needs to be dried for storage, same principle as dried yeast I suppose.

Just tried to stock up with yeast from Tesco (where I can usually get free fresh yeast) - none available. They are not even getting enough for themselves. Only arriving every other day rather than every day.
Have got some frozen - and an unopened tin of dried - so not going to run out. But be a bit bad if Tesco do run out. I know Morrisons use German yeast and have often not had any available (they sell it rather than give it away).
There also seem to be more gaps on Tesco shelves than I have seen for some time. Like 25% of their tinned fruit shelves empty. The other day everywhere seemed just about out of carrots. Some pet food shelves where they have put all the product at the front of the shelf to disguise lack of any more behind.

I too have noticed a shortage of some items at a couple of different super markets for about a week or so now. I think super markets stuffed their ware houses until they were packed tight prior to the start of the year. I wonder if some of that supply is starting to run out now.
All the news is taken up with Covid not much is being said about how easy it is to transport goods to and from the UK. What little I have seen seems to indicate things are a lot more difficult than they were. The government puts this down to teething troubles, the next few months will show if they are correct or not.
Yeast disappeared from supermarket shelves last year during lockdown. Apparently, nearly all of our dried baking yeast comes from Holland.
Yet partner managed to get a tin for me - no problem.
