Bike frame size

Having been cycling since the age of 4, I am now 75.
From age 4 till my early teens, bike size increased.
I am considering acquiring a new full framed ebike, as I am 6’3”dealers tell me I need a large framed bike. As opposed to medium.
However BATRIBIKE GAMMA comes only in one size.
To accommodate different sized riders. Seat stem is raised or lowered. The same with handlebar. My wife is a petite 5’2” and she too could ride the same bike. Obviously, with said adjustments.
So. As we are not professional cyclists, we would do on average 80 miles a week.
Would frame size make a difference?

I'm not sure frame size is too important (as long as it isn't too big, especially with crossbar). I've always preferred a smaller frame than recommended; different people have different shapes (as well as different sizes) and different ideas. However, it doesn't look as if there is much room for stem/handlebar adjustment on that bike. Fitting rise bars can be awkward on an ebike because of cable lengths.

As a 6'4" bloke I normally need not just Large, but XLarge, as would you, whereas your wife will be a XSmall / women's small.

I'm pretty sure that's too much of a compromise. I occasionally ride my wife's ebike (womens large - she's 5'7") and I can do it, but it's not much fun.

If you're going to use the bike regularly (as 80 miles a week is) I'd go for a Large/XLarge framed one just so you're comfortable, and XSmall for your wife. Spend twice, but be in comfort.
(If for some reason one of you decides to stop riding in future, then they will have some residual value, so not all the costs are sunk.)

Why not try visting a Halfords, or somewhere with similar one-size bikes, and see how they feel for both of you.

Folding bikes and folding ebikes can typically accomodate a wide range of rider sizes. Although 6'4" is perhaps a little beyond many folding bikes I think. However folding bikes are a great option for easy storage and perhaps sharing amongst other members of the family. Perhaps a family in a flat who have to store the bike in the flat and only have space for one bike but have multiple family members who want to use that bike.

Dahon folders accommodate riders up to 6'4", especially the older ones. Nice light frames too. I don't know how user-repairable their electric bikes are, and information regarding max rider height is absent on websites these days.
