Big guy - which bike?

Hi, I am currently a big guy (115kg 183cm), but hoping to start to change this. To this end I am thinking of an electric mountain bike with a reasonable range but at a price point to try it out bef jumping in and spending big money. I will mainly ride cycle paths and routes in the countryside rather than on the road. I also have to consider the weight as I will transport the bike either on a car roof rack or the back of my caravan. Any suggestions please?
