photographers - bags and storage query?

I decided to get a DSLR recently, nothing too special, just a Nikon D3000 and also a 70-300mm lens.

I got a standard SLR camera bag to put inside my Ortleib panniers which I can just about fit the body and 18-55m lens - the larger bags would not have fitted inside the panniers (which already contain a variety of items I use for work as well as a basic toolkit in case of punctures etc).

I think there's a few photographers on here, so anyone got any suggestions for bags for both the camera and extra lenses? also is safer to store the camera with the (smaller) lens demounted from the body or attached?

I use a Samsonite Trekking case which fits on a bracket in front of the handlebars. It holds my Canon400 body, 18-55mm lens, 75-300mm lens, 500mm f8 mirror lens, lens-hoods and other accessories. It depends on what I am doing whether I leave a lens on the body or not. I always use caps on everything.
