The control panel and the motor controller work together as a set, and you have to buy them as a set. A controller with an LCD panel will cost from £40 for one that works up to ££70 for one with a very nice control system. I think I've seen controllers with the panel you indicated for as low as £30.

Those three-level control panels use speed control, so you still get full power when you turn the pedals, but the power ramps down to zero at three different speeds, like 10 mph, 14 mph and 20 mph, depending on your motor.

The LCD panels normally have 5 or more levels. The cheaper ones have speed control and the more expensive ones have power control, where there is a different power with no speed limit in each level.

Whatever you get, you'll most likely have to do some wiring and soldering to fit it, like changing and adjusting connectors.

The bike is a at the low end price for value ebikes so the electronics are very basic, you get what you pay for. The only option is as vfr has stated you need to buy a replacement electronic kit that uses current control and not speed control, but will entail soldering and changing connectors.
Don't just but any old controller and display other wise you will have much the same as you have, so ask or show a link to one you find so that we can tell you more about it.

U tube might be useful but you will need to learn or practice some soldering skills, otherwise you will need a competent ebike enthusiast to help you out.
Without a location you might be in Timbuctoo.

No chance in Leicester you are in Lock Down ???
By putting in a location it will be up to the good will of a ebike friendly enthusiast who might offer their service's to help out.
I can only think of one ebike expert/retailer who might help but they are in Southend.
