What would happen if you got caught in the UK riding on of those rides on the road? Thanks

Depends on the circumstances. If it was adapted and registered as a moped, with number plate and (free) tax disc, and you were wearing a motorcycle helmet then nothing at all, provided you didn't commit any motoring offences, since the Highway Code would be deemed to apply to you in the same way as it does to any motor vehicle

Otherwise, principally potentially the criminal and civil penalties relevant to :

Driving without insurance
Driving without a licence or whilst disqualified (if no licence)
Using an unregistered motor vehicle on the public highway
Riding a moped without an approved motorcycle helmet

... in whatever legal terminology the above are couched in for official purposes

I think the bone of contention is getting insurance.
You are not supposed to ride it without insurance (and helmet).
You can't get insurance unless it's registered.
You can't get it registered without the bike is typed.
You can't get it typed if VOSA knows nothing about it.

which could add up to several thousand pounds. points on licence and even a possible prison sentance.

50 cycles must have sold over a hundred of these bikes, but I recon only a small hand full have insured them but still ride them on the roads

And how have they insured them for road use ? . To do so would need to get it registered and according to DVLA stats not a single Kalkhoff has been registered. Not surprising really as they cant be registered as supplied.
