Is handlebars a worry then? Mine have covers plus I always have a florescent jacket and a t-shirt on.

Brake levers maybe. My mate put one of those through a old boys leg back in the 80s. Lot's of swerving before they collided
Any part of the bike can injure you in an accident. It just depends how you fall or how you get hit. Recently, I got lanced by a cut branch of a tree. I was riding along an off-road cyclepath that had a big puddle in it, so I was going down the side, rubbing against the bushes. Inside one of the bushes was a hidden fallen tree that had been cut back, then the bush had grown over it to cover it. The incident was like something from Ivenhoe: I was riding along, when suddenly I was hooked of my bike, and the bike carried on for a bit without me. Luckily, it was winter, so I was wearing a thick coat, which saved me from serious injury.
Last summer, I was doing a U-turn on my scooter, when the wheel went into a deep pothole, so the scooter fell and the handlebar hit my side. It was painful for a couple of days then I thought I was OK. Two weeks later, the pain came back with a vengeance, so I had to go to the hospital, where they found an absess on my lung, presumably caused by a broken rib interfering with something. I had to stay for a week, mainly while they figured out what was wrong and got the infection stable.
You could wear a suit of titanium armour while riding your bike if you could afford one. That's if you wanted to cover every type of injury.
