electrical switching of PAS/throttle

I have a basic understanding of electronics - just enough to be dangerous and not enough to be really useful!

Is anyone aware of a keytype switch that would allow me to switch the controller inputs for my bike on and off when I was riding it.
I was thinking of 3 Modes:
1) PAS - monitor pedelec only - ignore throttle
2) PAS & Throttle - monitor throttle and pedelec sensor
3) Throttle - ignore pedelec

4th mode - nice to have : Switch off all, but leave battery on - wiring of battery to other devices like lights via another key switch could do this though.

(I wouldn't even know what to call this sort of thing to start looking)

Middle bit of the UK.
New here myself I have a thread in the technical section "£20 Thing".

Mines a little bit of a cross between a bike and a scooter. I have an ignition key that switches the main power on in the first position. With the option of going to position 2 and putting the lights on also.

I added a small voltage dropper so that i could use 12v LED bulbs instead of the 36v standard type.

I have a switch that disables the throttle only mode. But it still works in pedal mode.
I maybe wrong here but how will you control the speed when the pedal assist kicks in? Dont you need the throttle for that?

Pedal assist only assists you control the speed the same way you would normally, by using higher or lower gears, pedaling faster or slower and using the brakes.
Human legs make a very good throttle and not having to twist the handlebars on a long trip down country lanes allowing for hand movement is lovely.
Recommend PAS as well as throttle ( useful for traffic lights)
