Thinking of fabricating my own customized e-bike by basically using a full suspension MTB or similar as a basis for a frame and utilizing a rear wheel hub motor kit. I notice there are now 2000/3000W motors out there - Amazon etc - and as such, I would greatly appreciate your thoughts on the following

Are these 2000/3000W kits any good? Any particular recommendations?
Batteries - These kits seem to require 48V, 72V even. What do we recommend here?

My personal tip is for you to stay within the law, which limits e-bikes, not on private land, to a max of 250 watts.
More powerful e-bikes need to be registered, road tax and insurance must be paid, crash helmet worn (a good idea on ANY bike!), just like any normal motor bike owner. Good protective clothing is also a good idea.
Others here can give you more advice, but DO remain fully legit, for anything you decide to do.

Quite apart from the legal issues quite correctly addressed by Andy-Mat (*), almost all these motors are direct drive and very inefficient at almost everything (including going up hills). They need a battery capable of massive current delivery, and use it inefficiently so have a very limited range unless the battery also has very large capacity. Such a battery is very expensive, and also very heavy making the bike very unwieldy. They are good at going absurdly fast on the flat.

Minor correction to Andy's post. not on private land . Also not legal on land accessible to the public, so no bridleways, canal paths etc.
