I have a Spiked e-bike with a SR Suntour HESC drive system with front wheel motor. I'd like to change the limit from 25 km/h to somewhat higher, like 30 km/h. Would that be possible?

No, I even contacted the supplier. That is the only system they have that can not be tuned. Unfortunately.
