I’ve just upgraded to a [52V 20ah 40A BMS 21700 Panasonic TSL 4800 mAh battery] paired with [1500W 35+1A controller] and [48V 1000W brushless rear hub motor].

On my SW 900 display there is an option [P14] for current limiting. Surely if my controller is rated 35+1A Continuous and my battery had a 40A BMS then changing my current limiting to 35A is fine?

I understand with these displays there isn’t an option for 52V under voltage setting, it goes from 36V all the way up to 72V but 48V is the option for a 48V/52V battery but that just means my battery level will not be accurate can anyone recommend a decent display that isn’t far to expensive.

35 is less than 35+1 and 40, so in simple numbers terms that's OK. If that is a direct drive motor, it will be very hungry for amps during starting off, hills and acceleration, so may be pulling the max Amps fairly often, depending on your riding style. That may affect battery life. Time will tell.
