I've managed to add a throttle using the Arduino mod. Now I was wondering if I could use a Arduino to trick the bike into thinking it's going slower? I tried a new controller but the battery will cut out of it detects current is being drawn without communicating with the controller.

Has anyone had any experience with this? I would like to fit a new controller really without buying a new battery

I don't think it's easy or even possible.
you need to assess first whether there is a speed sensor on your bike or inside the motor.
Then you have to access the speed sensor wire if there is one.

I belive the sensor is within the motor itself. There is a white wire but cutting this makes no difference.
i was considering buying a new rear motor but im thinking the Suntour controller will kick up a fuss.

you are stuck with keeping the controller. I can't see how you progress from there.
