hi i have this kit from amazon for my wife's folding ebike , she finds the 3 levels of assist frustrating as on level 1 its often not enough assist but on level 2 on a flatish road the motor takes over too much and oe

pedaling becomes pointless its a single geared bike so can't change up unfortunately

Thanks for your help

Forgot to add its a 36v 250w hub motor
I experienced a similar issue on my wife's Pendleton Somerby - if you read my posting here, you'll see what I did to upgrade the controller and display - it'll cost you around £80 to do but it'll change the nature of the ride experience for the better.

The Amazon bike with three speed control likely has speed controller, this gives max current at all three levels with each level having a max speed limit. So maybe something like 8, 12 16 mph. The (power) acceleration doesn't change so the ride feel can be erratic and too fast from a standing start.

A new controller (KT model) and display with 5 assist levels uses current (power) control. You will get the same max speed in all levels, the difference though is as you toggle up through each level the current (power) differs so you get far better control over the acceleration.
The power levels vary and are approx 13%, 20%, 33% , 50% & 100% of the available current.

Thanks that makes sense , I have looked on the link mentioned above and to be honest its all a little confusing still . I will need to read into it a little better , are there any uk suppliers of the kt stuff ? I really don't need anything special like you said just something more controlled would be ideal thanks

UK suppliers tend to over charge for stuff you can get on Aliexpress or a good China ebike store by up to 100%, so it pays to go via China where they not only just sell the controller & displays but all the other bits as well.
For ease of use KT are the best after market control systems to buy because so many vendors sell them, for the extra simplicity and quality they are a bit more dearer.
