Third attempt to build my e-bike

This is my third attempt to build my e-bike. In the first two attempts, I failed, since I realized I was not understanding 100% what was going on. Slowly, I am trying to learn. I hope this is my last attempt:

In fact, I want to build two e-bikes, one for my girlfriend, another one for me. I will build first my bike (in order to commit stoopid mistakes in my bike, not in my girlfriend's). I only have my girlfriend's bike close to me right now, and for this reason I only upload pictures of her bike (but my bike, in fact an old bike my father still has but without use, due to knee injury):



Of course, the rear mudguard will be removed. She has a 3x7 gearing, with freewheel (not cassette). No disc brakes.

She has no eyelets for a rack:

I want to build a 36V Xiongda 2 speed, 5-7 freewheel, not-disc for her.

I have checked rim prices at BMSbattery (I have to buy batteries anyway), and despite being cheap, shipping costs for rims (and batteries) are outrageous, so I have been thinking in buying a decent 36h rim locally such as:

Will this:

be enough to accomodate the battery's rack to that bike's seat stays?

And a HWBS, in order to reduce the amount of cables to the minimum. Also a throttle. I will need torque arms, too, I believe.

I have chosen that battery for two reasons:

1. Her frame does not accomodate easily a box
2. She will park the bike really close to her job, since very recently they have opened a "bike parking place", 8 eur per month, with guards. Very convenient. She is light and small, and the return journey is about 20km (with mild but constant hills in the initial direction). So, she does not really need a stealthy configuration. But of course, I will try to build as stealthily as possible (I do not know if it is better to put the controller below the battery, or at the seat tube; will the Xiongda controller fit inside a KU63 controller case?)

My bike will be quite similar, but 48V, and the battery will be:
